Abstract
<jats:p>The primary aim of this study is to examine the relationship between kitchen ergonomics and production efficiency in independent food and beverage establishments. In today's highly competitive business environment, organizations are evaluated not only by the quality of the products and services they offer but also by the efficiency and sustainability of their working environments. In this context, ergonomics has emerged as a critical factor that contributes not only to protecting employee health but also to improving the effectiveness of production processes. This book explores the impact of kitchen ergonomics on production processes through a multidimensional perspective, providing a valuable reference resource for both researchers and professionals in the food and beverage industry. This study adopted a quantitative research approach, and the data were collected through a questionnaire administered to 408 employees working in independent food and beverage establishments. The Production Efficiency Scale Based on Ergonomic Conditions, developed by the researchers using a five-point Likert scale, was employed as the data collection instrument. The scale consists of four dimensions: time and speed efficiency, quality and error control, coordination and process alignment, and physical sustainability and endurance. The collected data were analyzed using statistical software, and reliability, validity, normality, variance, and correlation analyses were conducted during the data analysis process. The findings revealed a significant and positive relationship between ergonomic conditions and production efficiency. In particular, ergonomic improvements were found to have substantial effects on time and speed efficiency as well as coordination and process alignment. Furthermore, ergonomic conditions were shown to reduce the risk of errors, thereby contributing to the maintenance of product quality. Regarding demographic variables, significant differences in ergonomic perceptions were identified according to participants' age and length of professional experience, whereas no significant differences were found with respect to gender or educational level. These findings suggest that perceptions of ergonomics are shaped primarily by individuals' professional experience and working conditions rather than demographic characteristics. In conclusion, the findings demonstrate that kitchen ergonomics is not limited to employee health and well-being but also plays a crucial role in enhancing production efficiency, service quality, and overall organizational performance. Therefore, the systematic and conscious implementation of ergonomic practices in food and beverage establishments can make significant contributions to both employee well-being and business success.</jats:p>
