Sunflower stearin-type oil: properties and technological potential: monograph

<jats:p>In the monograph the article examines current trends in sunflower breeding with a focus on increasing stearic acid content. It identifies the characteristics of seeds developed by Ukrainian breeders, from which oil with an elevated stearic acid content is obtained. An environmentally friendly method for modifying such oil is proposed – a one-stage fractional crystallization process without the use of catalysts. This method makes it possible to obtain a fraction with an optimal composition of stearic and palmitic acids and improved properties at low temperatures. This material will be useful for researchers and specialists in the chemical, oil and fat, and related industries.</jats:p>
