Abstract

<jats:p>This chapter provides an in-depth analysis of recent developments in protein-based packaging, with a focus on their applications in the agricultural and food sectors. It starts with an introduction to the historical and current significance of protein-based materials in packaging, highlighting their potential for sensitive food items in the future. The chapter explores the use of various proteins in film and coating formations, including wheat gluten, soy protein and gelatine and highlights their distinct properties and applications. A considerable section of the chapter is devoted to solvent cast films, outlining their production methods, properties and applications in sustainable packaging. The challenges and potential of protein-based packaging, including scalability, cost-effectiveness and performance under various conditions are discussed. The environmental benefits of these bio-based materials, such as their biodegradability and reduced carbon footprint compared to traditional packaging options, are highlighted. The chapter concludes with a discussion of the future of protein-based packaging. The focus is on overcoming current limitations and expanding applications through more efficient production methods, improved film properties and the integration of smart functionalities for active packaging. This comprehensive overview highlights the role of protein-based materials in revolutionising sustainable packaging practices and aligns with the global focus on sustainability.</jats:p>
